LOBSTER ROLLS

“from the best Canadian hard-shell lobster”

Makes 2 servings

Ingredients

  • 1 pound or so of frozen lobster meat thawed

  • ½ cup of mayo…full fat of course

  • 4 tablespoons of chopped celery

  • 4 tablespoons of chopped green onion

  • 1 ½ tablespoons of lemon juice

  • Salt and pepper to taste

  • 4 soft white buns

  • Consider adding capers, hot sauce, dijon mustard or any other favourite condiments

Method

1. Combine all of the ingredients. Consider toasting buns and adding a little butter. Place the filling in the buns.

2. Then with restraint serve on two plates, calmly walk to the table, sit down and try not shove it in your mouth too fast. Enjoy the rest of your night…yum yum.
