Nova Scotian Halibut Cheeks with Garlic & Lemon Sauce

Serves 4

INGREDIENTS

  • 1 lb Fisherfolk halibut cheeks

  • 2 tbsp butter | 30 ml

  • 1 large red onion | Chopped

  • 5 cloves garlic | Sliced

  • 1 tsp salt

  • 1 tbsp chopped chives

  • 2 lemons | Zested and Grated

  • 1/2 lemon | Juiced

  • 1/2 cup white wine | 125ml

  • 2 tbsp capers | 30ml

INSTRUCTIONS

1. In a saute pan over medium-high heat, melt the butter.

2. Add onion and garlic and saute until translucent. Then add your salt, chives, lemon zest, lemon juice, and wine and reduce by 1/3.

3. After your sauce is reduced, add capers and stir.

4. Add halibut cheeks, cover pan, and cook for around 3-4 minutes on each side.
