Mustard Dill White Perch with Asparagus

A simple sheet pan bake with tender asparagus and flaky white perch, coated in a tangy and fresh mustard and dill marinade. It’s summer on a plate!

Serves 2-3

INGREDIENTS

  • 0.5 pounds white perch fillets

  • 1 bunch of asparagus, trimmed

  • 2 tablespoons mustard

  • 2 tablespoons lemon juice

  • 3 sprigs of fresh dill

  • 0.5 teaspoons salt

  • 0.5 teaspoons black pepper

INSTRUCTIONS

  1. Preheat your oven to 400°F.

  2. Trim 1 bunch of asparagus and roughly chop your dill.

  3. In a small bowl, mix 2 tablespoons mustard, 2 tablespoons lemon juice, 0.5teaspoons salt, and 0.5 teaspoons black pepper together until combined.

  4. Spread both the asparagus and the white perch in an even layer on a sheet pan.

  5. Coat 1 bunch of asparagus and the white perch with the marinade. Spoon any remaining marinade over the fish.

  6. Bake at 400°F for 15 minutes 15:00, or until the fish flakes easily with a fork and the asparagus is tender.
