Parmesan Crusted Ocean Perch
This baked parmesan crusted ocean perch is easy to make, and packs a flavourful, savoury punch!
Makes ~ 2-4 servings
INGREDIENTS
- 1 Pack Fisherfolk Wild-Caught Ocean Perch (~3-4 Filets) 
- 1/3 cup panko breadcrumbs 
- 1/3 cup grated Parmesan cheese (+ extra to taste) 
- 1/2 tsp paprika 
- 1/4 tsp thyme 
- 1/4 tsp oregano 
- 1/2 tsp salt 
- 1 tsp black pepper 
- 2 tbsp mustard 
- 2-3 tbsp olive oil 
INSTRUCTIONS
- Preheat oven to 400°F. Place Ocean perch filets on baking tray lined with parchment paper 
- In a bowl, mix mustard, paprika, thyme, oregano, salt, and black pepper. Brush mixture on filets and let marinate in fridge for 15-30 minutes. 
- Mix breadcrumbs and grated parmesan. Coat both sides of each filet in mixture ensuring the breadcrumb mixture sticks to each filet, and top with additional grated parmesan to taste. 
- Spray or brush the tops of each filet with olive oil. 
- Bake for 8 minutes, and broil for an additional 2 minutes or until golden brown and the fish flakes easily with a fork.

Cooking Notes:
- Garnish with fresh parsley and lemon wedges.
