Nova Scotian Halibut Cheeks with Garlic & Lemon Sauce
Serves 4
INGREDIENTS
- 1 lb Fisherfolk halibut cheeks 
- 2 tbsp butter | 30 ml 
- 1 large onion | Chopped 
- 5 cloves garlic | Sliced 
- 1 tsp salt 
- 1 tbsp chopped chives 
- 2 lemons | Zested and Grated 
- 1/2 lemon | Juiced 
- 1/2 cup white wine | 125ml 
- 2 tbsp capers | 30ml 
INSTRUCTIONS
1. In a saute pan over medium-high heat, melt the butter.
2. Add chopped onion and sliced garlic and saute until translucent. Then add your salt, chives, lemon zest, lemon juice, and wine and reduce by 1/3.
3. After your sauce is reduced, add capers and stir to combine.
4. Add halibut cheeks, cover pan, and cook for around 3-4 minutes on each side.
5. Plate and garnich with extra chives
